Dừa nạo mua về. Cho vào khoảng 400ml nước sôi. Nhồi kỹ, vắt lấy 300ml nước cốt đặc, để riêng qua bên. Sau đó cho vào thêm khoảng 400ml nước nóng, vắt lấy 1 tô nhỏ nước dão nha.
Lột khoai mì ngâm với một chút muối, ngâm khoảng nữa ngày cho ra hết chất độc. Khoai mì cho vào xửng hấp, như hấp xôi. Khi hấp cho lá dứa vào hấp cùng, rưới 1/2 lượng một chút nước dão dừa vào. Khoai mì chín, tắt bếp.
Lấy 1/2 lượng nước dão dừa còn lại, cho vào một muỗng canh bột bắp (hoặc bột năng), 2 muỗng cà phê đường, một chút muối, lá dứa bắt lên bếp quậy riu riu cho nước dão dừa sệt lại. Đổ hết nước cốt dừa vào sôi lên 1 lần, rồi tắt bếp.
Lấy 1/2 nước cốt dừa đã nấu ra tô để riêng. Còn lại đổ vào nồi khoai mì, vặn lửa nhỏ sên riu riu cho nước cốt dừa thấm vào khoai mì, thỉnh thoảng nhớ đảo đều củ mì. Cứ thêm từ từ nước cốt dừa vào cho đến khi nào khoai mì thấm thật thấm nước dừa. Nhớ canh châm cốt dừa để không bị cháy củ mì bạn nhé.
Rang mè vàng nhắc xuống cho vào một ít muối ( khoảng đầu muỗng cf không thôi mặn).
Khoai mì chín, gấp ra đĩa, khi ăn rưới lên xíu muối mè. Khoai mì thấm đậm cốt dừa béo ngậy tận bên trong củ mì, rất bùi và béo, thỉnh thoảng ăn trúng hạt mè nhai nhuyễn, thơm phức lên mũi các mẹ ạ, món tuổi thơ này, ăn chỉ có nghiện thôi.
