Cho lạc vào chảo rang lửa nhỏ tới khi lạc chín vàng thơm, sau đó để cho lạc nguội bớt thì dùng tay xoa cho vỏ lạc tróc ra hết. Cho lạc vào túi ni lông và đem giã dập.
Lớp áo ngoài chè lam: Cho bột gạo nếp vào chảo đem rang lửa nhỏ, đảo liên tục và rang cho tới khi bột nếp chín thơm là được.
Rửa sạch gừng rồi cạo vỏ. Bào cho gừng nhuyễn ra, hoặc bạn cũng có thể đem giã nhỏ. Cho đường đen, đường vàng, 1 xíu muối, nước, mạch nha vào nồi nấu, khuấy đều cho đường tan hết. Khi nước đường sôi lên bạn cho gừng vào nấu cùng khoảng vài phút thì tắt bếp.
Hoàn thành chè lam: Đổ hỗn hợp nước đường ra âu sạch, múc từng thìa bột nếp cho vào âu nước đường. Dùng phới khuấy đều tới khi được hỗn hợp chè lam đặc sệt. Cho hỗn hợp chè lam ra mặt phẳng sạch rồi thêm bột nếp, nhồi cho tới khi được 1 khối có độ mềm, chắc vừa phải là được. Bọc kín bột chè lam và để nghỉ 20 phút. Sau đó, đặt bột chè lam lên bàn, cán hơi dày rồi cắt thành những miếng vừa ăn. Sau đó lăn chè lam qua bột nếp sao cho chè lam phủ 1 lớp bột trắng bên ngoài là xong.
Như vậy, món chè lam đã hoàn tất. Cho chè lam đã hoàn tất vào hũ hoặc gói từng cái vào giấy kiếng và để dành dùng dần. Chè lam với bột nếp dẻo thơm, cay nồng vị gừng cùng hương ngọt thơm từ đường đen và đường vàng chắc chắn sẽ khiến bạn mê mẩn.
